They only made small quantities of Pinot Noir which, initially, was made and aged in the northeast Portland basement of one of the owners’ homes. Their grapes came from two vineyards near Amity. I barrel tasted them individually and neither was very good by itself. But, when you blended them together, WOW! The grapes on the hill were stressed and made sturdy wine with intense tannins. The grapes on the valley floor were fruit forward and voluptuous; if not flabby. Blended together they make complex, balanced wines made the way Oregon Pinot should be made. The original owners have since sold the winery. The new owners increased production and I haven’t really gone out of my way to purchase recent vintages. However, at this event we will be tasting from very rare magnums of their earlier vintages. Ringside is one of Portland’s oldest family-owned restaurants and still the city’s best traditional steakhouse. At 70 years old, it has a clubby, Rat Pack era charm, quality steaks and some of the city’s most on-the-ball servers. You won’t find trendy cuts. Ringside stays with juicy steaks seared to order and delivered with a smile and fluffy baked potato. They are the only Portland restaurant with on-site 28-day dry aging of their beef. Executive Chef Beau Carr has been in the northwest since the age of 8. After years of working in Portland area kitchens, he became sous chef at another of our favorite restaurants: Huber’s. After graduating from WCI in 1990 Carr was named Chef de Cuisine at Northwest Restaurant. For a while he was Chef/Owner of Chalet Swiss. In 1998 he joined the RingSide family as Executive Chef.
